Asparagus with Roasted Peppers
Fresh and tasty and extremely fast to make.

Cooking Time: 5 m Serves: 4
Ingredients
1 1/2poundAsparagus
1cRoasted red pepers
2 1/2teaspoonExtra virgin olive oil
1 1/2teaspoonLemon juice; fresh
Instructions

Rinse asparagus.

Cut asparagas into thirds.

Boil asparagus into a saute pan for 2 minutes until tender.

Drain asparagas in a colander and transfer to a serving dish.

Chop and combine with red peppers.

In a small bowl, whisk lemon juice with oil and salt and pepper.

Pour the mixture over vegetables and mix gently.
